Project Pollo, the growing company of fast-casual vegan restaurants that started in San Antonio, has an upcoming appearance on ABC's Shark Tank.
San Antonio restaurant owner Lucas Bradbury is hoping to feed the ABC sharks on Friday, May 20. His creation, Project Pollo, will be featured on the long-running ABC show Shark Tank, which gives entrepreneurs the platform to pitch to big name investors.
Since launching in San Antonio in September 2020, the fast-casual vegan business has quickly grown across the state and is aiming for a national expansion with 22 to 24 units throughout the U.S. by the end of 2022, Bradbury tells MySA.
Bradbury says his conversation with the five industry titans including Mark Cuban, Kevin O'Leary, Robert Herjavec, Daymon John, Barbara Corcoran, and Lori Greiner lasted about an hour. He's curious to see how the pitch is edited for airtime. Bradbury says the filming coincided with Project Pollo's first anniversary on September 18, 2021.

Bradbury is not able to disclose if the sharks bit, of course, but he is happy with the exposure Project Pollo will receive from its first national television appearance.

"I'm excited to tell our story to a large audience," he adds. "As we continue to grow a brand and focus on changing the future of sustainable consumption, we really wanted to make an impact and let a large audience know exactly what we're trying to do."

Project Pollo has five locations in San Antonio. The vegan chain also has locations in Austin, Houston, Dallas, Katy, and Round Rock. Locations are planned for Corpus Christi and San Marcos.
With a national expansion in sight, Bradbury is not forgetting how San Antonio played a role in Project Pollo's success.
"Everything we've built has been because of San Antonio," he says. "It's really cool that we're able to start that foundation here and it's going to be exciting for the community to know that they're behind a company that's going out there and truly, truly challenging the system and sustainable consumption."
The episode airs on ABC at 7 p.m. local time on Friday.
